Italian Pesto Chicken
When we talk about cooking technique, pan searing is one of the greatest technique that takes your chicken to the next level. At the same time if you can combine garlic basil and olive oil with that it gonna take you to heaven. Just joking!
If you have a grinder then put Grind basil leaves, garlic, cashew nuts, parmesan cheese, salt, pepper and olive oil in order to a fine paste that should look deep green.
Take a bowl and add the chicken with the pesto sauce you made, add salt as required with a little olive oil. Keep in mind that the pesto sauce already has olive oil in it. Then mix everything in the bowl with hand. Let it marinate for at least 30 minutes. It will taste better if you can marinate it overnight.
In a flat pan or cooking pan heat some olive oil and put the gashed side of the boneless chicken on the pan for two or three minutes and sear it. Flip your chicken and sear for another two or three minutes in high flame then besting it with pesto sauce.
Down the high flame and pour, the accumulated oil you kept on the pan seared chicken pieces. In this stage bake it in the oven for 200°C for twelve minutes or cover the pan with a lead and cook for twelve minutes.
Cut your tomatoes into halves and put in the same pan on high flame. All in all, don't burn anything. Now, server your Italian Style Grilled Pesto Chicken with cherry tomatoes and enjoy.
Let’s have a look at the ingredients we need in order to cook Pesto Chicken:-
- Two cups of fresh Basil leaves
- Four cloves of peeled Garlic
- One by four cup Pine nuts/Cashew nuts
- Two by three cup Extra-virgin olive oil
- Salt and freshly ground black pepper as you love
- One by two cup freshly grated Pecorino or Parmesan cheese

- Twelve to fifteen strips of boneless Chicken breast
- Cherry tomatoes

Make the Pesto Sauce first
