Hyderabadi Dum Biryani recipe

When it comes to recipe-searched items, biriyani is one of the most common recipe people love to make, eat and share. In Asian sub continent, Biriyani adored since the era of kings. Hyderabadi Dum Biryani or Hyderabadi Biryani is a Mughal recipe. Though the overall cooking process would be highly complex for those who are in the kitchen for the first time. However, Hyderabadi Dum Biryani is such a cuisine that creates sublimeness in your mouth. Let us share the key ingredients and cooking process of Hyderabadi Dum Biryani


Hyderabadi Dum Biryani

Required Ingredients of Hyderabadi Dum Biryani

For Marination process


  • One kilogram of Mutton
  • Ginger
  • Garlic
  • Green Chillies
  • Water
  • Fried Onion Paste
  • 2 cups of yogurt or curd
  • half table spoon of Turmeric Powder
  • two tablespoons of Red Chilli Powder
  • Well Chopped Coriander
  • Well Chopped Mint Leaves
  • Garam Masala Powder
  • Half Lemon Juice
  • Salt as you need

For Garam Masala Powder


  • Cumin Seeds
  • Green Cardamoms
  • Black Cardamoms
  • Black Pepper
  • Cloves
  • Cinnamon Sticks

For Rice


  • Three liters water
  • Half Long Grain Rice or Basmati Rice (Soaked in water for 15 minutes)
  • Bay Leaves
  • Cinnamon Sticks
  • Green Cardamom
  • Cloves
  • Two table spoon of Salt 

For cooking the Biryani


  • Ghee
  • Chopped and Fried Potatoes
  • Saffron in warm milk
  • Chapati Dough

For Garnish


  • Fried Onions
  • Mint Leaves
  • Coriander Leaves

Method

Marination instructions

Put the ginger, garlic, green chilies and a little bit of water in a grinder to make a paste. Keep half of the fried onions and make a paste with the other half. Take Green Cardamoms, Black Cardamoms, Black Pepper, Cloves, Cinnamon Sticks and Cumin Seeds in your grinder to make a well ground Garam Masala powder. You can also buy Garam Masala from your nearest supermarket but home made one tastes better. Add the ginger-garlic-green chilies paste, yogurt, turmeric powder, chili powder, coriander, mint leaves and the freshly ground garam masala powder in a bowl with the well cleaned and washed mutton pieces. Use your hands to mix all the ingredients together. In this stage add your fried onion paste and mix again.

Meat cooking process

Use a pressure cooker to cook the marinated mutton on a low flame for 20 minutes with a little bit of water. Wait for three whistles.

Rice Cooking process

Add your bay leaves, cinnamon sticks, green cardamoms, cloves and salt in a vessel filled with water. As the water starts boiling, add the soaked rice into it. Cook the rice for 10-12 minutes until it’s 75% done. Put the cooked rice in a large dish after draining the excess water and let it cool down.

How to prepare Fried Onions

Add one tablespoon of salt to the chopped or sliced onions and keep that aside for 15 minutes. After 15 minutes deep fry your onions until it turns golden brown then crush with your finger.

The Biryani

Spare some ghee on a heavy-bottomed pan and put half the quantity of the partially cooked rice to make a layer. In this stage, add your cooked mutton gravy. Add some fried potatoes on the layer. Pour your saffron and milk mixture on top of the layer. Add some more ghee and garnish with coriander leaves, mint leaves, and fried onions. Now let the biryani cook for 20-25 minutes after adding chapatti so that the steam hold inside. Remove the lead carefully and now you have perfectly cooked Hyderabadi Dum Biryani.
